Choosing your slicer

Choose the right JAC to perfectly slice all your bread!

Choix trancheuse

The first thing to do is clearly identify the bread that you are going to have to cut

The slicing quality that your future JAC machine will give you depends on you making the right choices before purchasing your new slicer…

The perfect cut depends on: a good match between the height of the bread and the bread pusher; the quality of the blades compared to the resistance of the bread, crumb and crust; and the power of the motor that will drive the mechanism and ensure a constant throughput of bread throughout the slicing process.

Determine the average height of your bread. In this way you can choose the right bread pusher height. This will ensure that the bread is correctly pushed towards the blades without excessive deformation.

It is best to choose the most versatile pusher possible.

Choix trancheuse

Assess the resistance of your bread as it passes through the blades... i.e. hard or very hard crust, soft or very sticky crumb, desired slice thickness, etc.

This will enable you to choose the type of blade with which the machine is equipped so as to be able to make clean cuts and keep the blades clean. This will also tell you if it is preferable to install a pusher with integrated lubrication.

Cutting process and quality are assured by a constant throughput of bread through the blades. It is therefore important to choose the most suitable motor to ensure slicing consistency on a daily basis.

How to properly maintain the JAC slicer and ensure continued performance

Choix trancheuse

Superficially clean the slicer: the body, the stainless steel counters and the crumb tub

Once a week

EQUIPMENT REQUIRED

Choix trancheuse

Soft damp cloth                         Small brush with soft bristles

Choix trancheuse

Using the damp cloth, wipe the machine starting at the top and wipe the crumbs towards the front of the machine.

NOTE: Do not use strong detergents or abrasive sponges!
With the small brush, remove the crumbs contained in the blades and brush them to the front of the counter.

Remove and empty the crumb tub by wiping the inside using the cloth.

Choix trancheuse

Thoroughly clean the blades with the special brush.

Every day

EQUIPMENT REQUIRED

Choix trancheuse

Special blade brush

Choix trancheuse

Do not let your slicer's blades get clogged up because this significantly reduces its performance and the bread slices will end up being torn to shreds during cutting.

Raise the bread pusher with one hand and, using the special blade brush, brush back and forth until the residues have been removed.

For good quality cutting, only slice bread with a core temperature below 30° C.

Choix trancheuse

Remember to only use JAC blades when you change them during maintenance. Using any other brand will void the machine's warranty.

Remove and empty the crumb tub by wiping the inside using the cloth.

Every 1000 slices

Choix trancheuse

Replenish the lubricant in the pusher reservoir of the MISCH version.

Choix trancheuse

Note
Only use JAC white lubricant, which is guaranteed food-safe and is odourless and flavourless

Carefully pour the lubricant into the pusher reservoir ensuring you do not exceed 100 ml.

Choix trancheuse

Once a week

Choix trancheuse

Clean the slicer version equipped with a cleaning hatch (as an option).

Choix trancheuse

Use a vacuum cleaner to remove the crumbs. Lift up the hatch located in the cutting counter to access the space to be cleaned
