As a commercial bakery owner or manager, one of the tasks you need to keep track of is whether the bread dough slicer is being maintained properly each day. It may be easy to think that skipping a day won’t matter much or that you or whoever you have assigned to look after this task can simply play “catch up” the next day. This is not true. The machine must be cleaned daily according to the instructions in the manual. Along with cleaning the tank, the knives must be cleaned each day.
