The Rollform is a horizontal moulder for working with minimal pressure on the dough since there is no need to counteract gravity when moving the dough piece on. It features an ingenious self-tensioning belt system (a JAC patent) which enables the dough to be rolled without degassing it. Sheeting rollers have been eliminated to achieve rolling (forming) which is kind to the dough structure => zero stress. The process takes its inspiration from manual moulding by both eliminating its physical stresses and optimising productivity. You are bakers, passionate about the “old-fashioned” Tradition baguette, i.e. moulded so as to give it a rustic appearance. The Rollform is the answer for you. It can fit into a traditional continuous process. Or it can be used in production organised in the form of refrigerated proving on trays.
